Składniki:

  • 800 g wołowiny - KARK WOŁOWY
  • 300 ml czerwonego wytrawnego wina (najlepiej burgundzkie, ale każde wytrawne wino będzie odpowiednie)
  • 1 duża cebula, pokrojona w piórka
  • 2 marchewki, pokrojone w grube plastry
  • 2-3 ząbki czosnku, posiekane
  • 200 g pieczarek, przekrojonych na pół
  • 350 ml bulionu wołowego
  • 100 g boczku wędzonego, pokrojonego w kostkę
  • 1 łyżka koncentratu pomidorowego
  • 2-3 gałązki tymianku i 1-2 liście laurowe
  • 2 łyżki mąki pszennej
  • 2 łyżki oliwy z oliwek
  • sól i pieprz do smaku
  • świeża natka pietruszki do dekoracji

Sposób przygotowania:

  1. Przygotowanie mięsa: Wołowinę pokrój na kawałki wielkości ok. 3 cm. Oprósz solą, pieprzem i mąką, aby mięso ładnie się zrumieniło podczas smażenia i nadało sosowi odpowiednią gęstość.
  2. Smażenie mięsa: Na dużej patelni rozgrzej oliwę i obsmaż kawałki mięsa na złoty kolor z każdej strony. Gotowe kawałki przełóż do garnka lub naczynia żaroodpornego, w którym mięso będzie się później dusić.
  3. Dodanie boczku i warzyw: Na tej samej patelni podsmaż boczek, a następnie dodaj cebulę i marchewkę. Smaż kilka minut, aż warzywa lekko się zrumienią. Dodaj czosnek i smaż jeszcze przez minutę.
  4. Duszenie: Przełóż podsmażone warzywa i boczek do garnka z wołowiną. Dodaj koncentrat pomidorowy i dokładnie wymieszaj. Wlej czerwone wino i bulion wołowy. Dodaj tymianek i liście laurowe.
  5. Pieczarki: Na osobnej patelni podsmaż pieczarki na odrobinie oliwy, aż lekko się zrumienią, a następnie dodaj je do garnka z resztą składników.
  6. Duszenie: Przykryj garnek i duś mięso na bardzo małym ogniu przez około 2–3 godziny (można także piec w piekarniku w temperaturze 160°C). Wołowina powinna być miękka, a sos gęsty i aromatyczny. Jeśli sos jest zbyt rzadki, odkryj garnek na ostatnie 20-30 minut duszenia.
  7. Podanie: Wołowinę po burgundzku podawaj posypaną świeżą natką pietruszki. To danie świetnie komponuje się z puree ziemniaczanym, świeżym chlebem lub bagietką.
