  • 2 tablespoons olive oil
  • 2 cloves of garlic
  • 1 teaspoon of juniper
  • 100 ml of dry red wine
  • 150 g of blueberries
  • 1 tablespoon honey
  • 1 tablespoon butter
  • Salt and pepper to taste

Preparation:

  1. Pat the tenderloins dry and rub with garlic, juniper, salt, and pepper.
  2. Heat the olive oil in a pan and sear the tenderloins for 2-3 minutes on each side.
  3. Transfer the meat to a plate and cover with aluminum foil.
  4. In the same pan, pour in red wine, add blueberries, honey and cook for 5 minutes until the sauce thickens.
  5. Add butter and mix thoroughly.
  6. Slice the tenderloins and serve with blueberry sauce and celery puree.

Serving suggestion: Pairs well with roasted potatoes and a light arugula salad.

Tip: To retain their juiciness, do not fry the tenderloins for longer than 3 minutes on each side.
